There is always something new to snack on in our house. It’s, like, one of the house rules. I swear. Because of my love of baking, I am always coming up with new cookies, cupcakes, and other sweet treats. The nerdlets seem to be pretty big fans of my baking addiction.
Lately, I’ve been trying to branch out from cookies and cupcakes to do other sweet snacks like candies, and even some things that are a little more on the savory side.
This chocolate marshmallow bark is such a quick and easy snack that comes together in just minutes! It has only two ingredients, and no added sugar or fat. In fact, it’s a fairly low-calorie snack too (unless you eat half a pan like we do it around here)
Choosing the Best Ingredients
I am a firm believer in using what you have on hand. However, there are a few ways that you can make this treat a little better. Any type of chocolate will work (you can even do white chocolate or dark chocolate!)
However, I do recommend buying the best quality chocolate that fits your budget. If you buy the cheaper chocolate you may want to add about 1T of coconut oil to your chocolate to be sure it has a smooth texture when melted.
You can also go with vegan marshmallows if you prefer. They should be easy to find at any health food store. I know Whole Foods Market has them as that is where I get mine.
How to Make Chocolate Marshmallow Bark
As I mentioned above you only need two ingredients for this one! It takes a few minutes to melt the chocolate because you want to go slow to be sure not to burn it. Once that is finished its a simple matter of adding the chocolate to your pan of marshmallows and chilling about an hour to set. That’s it! It really couldn’t be any easier!
1 bag marshmallows ( you can cut larger ones down or use mini marshmallows)
1 bag chocolate chips
Pour marshmallows into a 9×9 baking pan. Spread them out so that you have an even layer. You don’t have to use the whole bag here. If you want fewer marshmallows you can just add the amount you would like. If you want more, add more! I do recommend leaving a little space in between each marshmallow so that you have some room for more chocolate.
Melt chocolate in the microwave in 10-15 second intervals. You can begin with about 20-30 seconds and go from there. Be sure to stir between each trip into the microwave to make sure your chocolate melts to a smooth texture.
Pour melted chocolate over marshmallows and smooth carefully with a spatula. You want the chocolate to completely cover the marshmallows and fill any spaces in between.
Once you have your chocolate covering the marshmallows pop your baking pan into the fridge. Let your chocolate chill for about 1-2 hours to be sure it has hardened.
Remove from fridge and cut with a large knife. You don’t have to be perfect here. You can cut it into larger pieces or smaller ones depending on your personal preference.
A Great Low Fat Treat
If you cut your chocolate marshmallow bark into about 1-inch squares this chocolatey treat can be a great low-fat snack. It is one of my favorites when I’m trying to avoid high-calorie candy bars but still want something with chocolate.
This snack comes out at around 211 calories per serving with about 10 grams of fat and 30 grams of carbs if you are tracking macros. This is using high-quality milk chocolate and regular mini marshmallows. You can lower these numbers by using vegan marshmallows and cacao chips in the place of regular chocolate chips.
